Does anyone here have a good recipie for Mountain Goat other than pan frying?
Which fat do you recommend mixing with Goat meat when grinding burger?

I've never had Mountain Goat but for regular old goat the Mexicans and Indians (India) do some really good stuff.

We ate ours just like deer and elk. I didn't mix anything with the grind. We had a 4 1/2 year old billy and to be honest it's some of the best game meat we've ever had.
My sister shot an older (7 1/2 year old) nanny and it was good as well.
The key is to not overcook the meat since it's so lean. More than med. rare and it's tough and dry. We rarely pan fry. We prefer to grill it over charcoal.

just a suggestion for a topic i know nothing about but summer sausage might work also if in doubt...steeleyes suggestion sounds like a good one...
