View Full Version : Smoked fish brine

With absolutely no humility whatsoever, I will claim that our family makes the best smoked fish in Wayne County, PA. Here's the recipe for the brine.

In a large glass mixing bowl, place:
3 qt water
2 cups real maple syrup, the darker the better
1 cup brown sugar
1/2 cup salt
1 tablespoon garlic powder
1/2 teaspoon pepper
3 bay leaves

Stir until salt and sugar are dissolved. Place 2-3 pounds fish (we use whole trout as well as catfish and bass fillets) in the brine, cover, and place in the 'fridge for 3 days. Stir once a day.

Smoke over hickory or apple for 2 1/2 hours.

Mucho tasty! When they were little, my kids preferred smoked fish to chocolate.

This sounds yummy! I've a fondness fore Maple syrup and this recipe sounds really tasty.
