I'm getting bored with my recipes and I have a few that need to be ate up.
Anybody have one they would like to share??

Try this one. It's pretty simple, and everyone I've fixed it for loved it.

Cook the bird in a cooking bag, or it'll dry out. Make sure you don't overcook.

If the grouse out West are anything like our Ruffed Grouse here in Maine, this cooking plan will work.
I take just the breast (skinned) and cube them. Fry the cubes in olive oil at a high heat until lightly browned on two sides. This won't take long at all (a few minutes on each side). Undercooking is preferred, as too much cooking really dries it out and makes it tough. I season with salt and pepper only and sissle in a little white wine at the last minute. Then serve with veggies and a white wine. I used a Pineo Gregio (sp?) the last time and it seemed to be the perfect blend.

Friend made this at moose camp with some spruce grouse we shot (I know, I know, but I actually don't mind the taste, especially when their bellies are full of low-bush cranberries). Breast out the bird and cube it, fry it to about half-cooked in a pan, add in a can of cream of mushroom soup and half a bag of frozen mixed veggies. Simmer until bird and veggies are cooked. Pretty damn good if you ask me.
Best grouse recipe I've found is from the L.L. Bean Fish & Game Cookbook. Grouse on giblet toast. Positively decadent. Great book in general but that recipe rocks.

Gotta say that I haven't tried the recipe CCH just refered to but the cookbook is a MUST HAVE for game cooks. I've had a copy for more than 25 years and have not tried a bad recipe yet. Oddly it wasn't available on the LL Bean website when I looked for a copy to give as a gift a while back. There's also a great recipe in one of the Colorado Cache cookbooks (the CO Junior League cookbook series) for a pot pie made w/ grouse and or other game, I've done it w/ rabbit too. My family has loved it when I've made it. I'll try and get it on here. Not a "backcountry" recipe, definitely for grouse that make it to the home kitchen.

I lived in SD for almost 12 years and sharp tail grouse and prairie chickens were the norm. A lot of the locals don't care for them when compared to pheasants, in large part because of the grouse's dark meat. However, I liked to make grouse stew or grouse chili. I've also grilled them on a shish-kabob wrapped in bacon. However, my favorite is Grouse-garlic-pesto-pasta. http://allrecipes.com/Recipe/pesto-pasta-with-chicken/detail.aspx I substitute sweet bell peppers. This is a good meal to take to camp because you can pre-cook the noodles and meat before you leave and through it all together in camp.

Cleve, you MUST try it. If you don't have grouse, substitute any bird pretty much -- even chicken. It's a heart stopping wonder. Perhaps I remember it so fondly because when I first had it, we bought NO meat from the store -- venison, grouse and rabbit made up all of our protein for a couple of years. Felt like a rich man eating that stuff I tell you. Guess I was because I had a woman who went to the trouble to fix it and had the pleasure to take the grouse itself.

Countryside Grouse.... lightly brown cubed grouse breast in a Dutch Oven. Add 2 cans mushroom soup, cubed potatoes.. carrots..onions...peas, and water to cover all. Simmer until all is done or really close to it. Make standard biscuit recipe (or the original was made with thick pancake mix dough 'cause we didn't have flour or biscuit mix) and to cover top. If made (in camp) on stove top cover with lid and cook 'till "dumplings" are done or if you have access to an oven cook uncovered 'till biscuits are done and browned.
