Here it is, just substitute game liver. We've used deer, elk and pronghorn.

It rocks. It is the ONLY way I will eat liver, and I could eat this for 3 meals a day.

Kevin,

2 questions. Can you freeze a liver and make this or does it need to be done with fresh liver? Can you freeze the pate or is it best to keep it refrigerated under butter and be sure to eat it all within 2 weeks? (I am assuming no to both questions, but it never hurts to ask.)

Yes to both questions. I've used livers frozen for months, and I've frozen the majority of the pate I make. Elk livers are immense.

Never had a problem. It doesn't last that long in my house, not because it won't but because it's popular. I know it lasts 2 months or so in the freezer. It'll probably last a lot longer but that's the limit of my experience, and I don't want to just guess about how long it lasts.

It won't be as good as twisty bacon. I could have eaten ten pounds of that stuff, and frequently make it.

I mean no offense and all Kevin, I'm sure you lead a clean life and your liver is in pristine condition, but I will just stick to elk liver.


On a sad note, Jessie is threatening to not join us at the spring rondy. I told her that I would have angry (and hungry) savages chasing me down wondering were the twisted bacon crack is. I need to work on this!

Don't bother firing up that International if you can't bring the Twisted Bacon Crack!

I was one of the guys that were "last to the dance" - apparently somewhere behind Kevin, and was only able to partake of a fingernail sized twisted piece of Goodness last year. :(

Lookin' forward to this year's vittles!

I have a couple of elk livers I can bring to Rendezvous if anyone wants to try fixin' pate there.

Couple of hearts too.

And two tongues.

Patrick, let me have them a couple of weeks in advance, and I'll make pate for the crowd. Doing it at the rondy will be a bit too much work, as it requires several hours of prep.
