View Full Version : Beef Barley With Vegetables

I've been interested in making up a barley-based backpacking meal, and even discussed this with Patrick recently while in the field. So tonight I got my s..t together and made it.

1/2 cup Quaker Quick Barley
1/4 cup dehydrated mixed veggies
1/4 cup venison gravel or shredded venison
2 tsp low sodium beef bullion granules
1/4 tsp granulated garlic
1 tsp dried parsley
1/2 tsp dried thyme
1/2 tsp Mrs. Dash salt-free Table Blend

Mix it all up and put in a Ziploc. Pour dry contents of Ziploc in a pot, cover with water, and simmer, covered, on a gas stove or wood stove for about 15 minutes, or until tender and the barley has soaked up most of the liquid. Feeds one REAL hungry rambler, or two wimps. Yum.

Also, I was pleasantly surprised at how barley compared to instant brown rice. Here are the numbers, based on a one-serving meal.

No sodium

Based on a 2,000 calorie diet.

I'll be doin the salmon recipe with my own smoked salmon however. Store bought salmon /images/%%GRAEMLIN_URL%%/sick.gif

Ed,

Try the salmon meal at home first...it's unique, but good. Think "Pacific Rim Meets Foot-Powered Hunter"...something like that is what we came up with...s little sweet, a little savory, etc. We also felt that trout would go good in it, in place of the salmon.
