I make this chowder for picnics and parties

5lb bag potatoes
3-4 medium onions
6 stalks celery
6 herb ox bullion cubes
1 quart heavy cream
1 stick butter
2 tablespoons parsely
3 lbs fresh fish or assorted seafood

chop up the celery and onions add the bullion cubes and 2 quarts water and start it boiling

peel and chop up potatoes add to pan with just enough water to cover

when potatoes are almost done add fish and reduce heat

when fish is cooked reduce to simmer add heavy cream butter and parsely

That is all there is to it. Pretty simple and I usually don't get many complaints. I use cod or haddock if I have a choice but it depends on what I'm catching. Lobster and scallops sometimes find there way in too. I have never tried it with any freshwater fish but would be interested in the results if someone does.

Good luck Doug

mmmmmmm

pretty close to my wife's recipe.

It works plain as potato soup, add corn for corn chowder, or with just about any white fish or seafood. We've even used crawfish and bluegill.
